Grain-free Vegan Chickpea Blondies (only 6 ingredients!)

SO easy. SO yummy. SO healthy. What more could you want?

Contrary to popular belief, it is possible for healthy food to taste good - like, really, really good. If you have a sweet tooth but are sensitive to sugar or trying to watch your waistline, keep reading. This recipe was inspired by one of my favorite healthy chefs, Laura Lea Goldberg - check her out!

Recipe:

  • 1 can chickpeas, rinsed and drained

  • 1/3 cup cashew butter

  • 2/3 cup maple syrup (can add more or less depending on your sweet tooth)

  • 1 tsp vanilla extract

  • 1/2 tsp sea salt

  • 1/2 cup dark chocolate pieces or dark chocolate chips chips

Instructions:

  • Preheat oven to 350° and line a 8x8” baking dish with parchment paper or lightly grease with avocado or coconut oil

  • Add all ingredients except chocolate to a blender or food processor until batter is lump-free

  • Stir in chocolate and pour evenly into dish

  • Bake for 45 minutes (may slightly vary depending on your oven) and let sit 20 minutes before cutting and serving
