Health in Cookie Form (yes, plz): Banana carrot cookies with gut-healing coconut frosting (GF, DF, Vegan Optional)

I came across an Eating Evolved recipe for healthy breakfast cookies and replicated it with some slight mods. These babies are SO good. Not just “healthy good” but actually bakery status good. The best part? They are actually healthful and nutrient dense! TYSM to these cookies for, once again, proving my point that healthy and yummy are not mutually exclusive.

Cookie Ingredients:

  • 1 mashed banana

  • 1/2 cup grated carrot

  • 1 egg (sub flax egg if vegan)

  • 2 Tbs maple syrup

  • 1 Tbs coconut oil melted

  • 1 Tbs ghee melted (sub coconut oil if vegan)

  • 3/4 cup oat flour (can literally blend oats for a few seconds to make this)

  • 2 tsp baking powder

  • 1/4 cup oats

Coconut Frosting Ingredients:

  • 1 can full fat coconut milk

  • 1 Tbs maple syrup

  • ½ tsp vanilla

  • Pinch of salt

  • 1 Tbs gelatin (omit if vegan)

  • 2 tsp cinnamon

Directions:

Preheat oven to 400°F. Mix all dry ingredients together (except 1/4 cup oats), stir in wet ingredients, and then mix in oats. Scoop spoonfuls onto parchment paper and bake for 10-12 minutes.

For frosting, take the coconut milk solids from the top of the can and save the rest of the milk for your coffee in the morning or a hearty chia seed pudding :)) Add in all ingredients and blend for 5 seconds. Let sit in fridge for 30+ minutes and put on cookies once they’ve cooled.
